AI usually returns text: useful, but in a different shape every time. That’s a problem for automation: you can’t reliably pass such an answer to a CRM, a spreadsheet or the next step of a workflow.
Structured output means giving the model a response schema in advance. For example: request category, urgency, topic, a short summary, contact, whether a manager needs to reply.
In practice this works for processing requests from Telegram, emails and website forms. The model reads the message and returns fields according to the schema, and n8n or Python writes them to the right system.
It’s important to validate the result: required fields, allowed values, phone and date formats. If validation fails, send the record to a person instead of continuing the workflow automatically.
Don’t use this approach where the decision depends on the nuances of a contract, money or reputational risks. In such tasks AI can prepare the data, but an employee should confirm the final action.
